Sesame Ginger Chicken Salad

My entry to salads were both a classic Caesar and the Chinese chicken salad pack from Costco. The Chinese chicken salad pack was 50% wontons and crunchy noodles and the dressing was so sweet, but I did love it. I tried to get close to that one, but added more to it to make it a nutritious meal. The dressing can be prepped in advance and you can use either a rotisserie chicken from the market, or leftover grilled chicken from another meal. Vegetarian? Consider chopping up one of those pre-marinated tofu blocks you can find at many grocery stores, or even just add a big handful of edamame beans.
I didn’t add the wontons in the photo here, but it is as easy as cutting up a stack of wonton wrappers from the market into strips, and shallow frying them in some high heat oil. Spoon them out to drain on a paper towel.
