Nichole runs the beloved Kantine cafe in San Francisco and very generously put on this delicious dinner at her location when my last cookbook came out a few years ago. Her space is cozy and personal and the food delicious - a hint of bay area meets Scandinavia.
I picked a few recipes to try from her latest cookbook Scandinavian Everyday. As you would assume, it is packed with condiments and things to put on thin, seedy slices of bread. She has these gorgeous looking potato buns that are certainly on my list for summer hotdogs and I’ll share those here too! The headnote on these meatballs says that they are one of their most popular items, so figured I would start there. They have way more onions and egg than I typically use in a meatball, so the texture was tender and because they aren’t heavily spiced, we used them with a few different sauces in the fridge and they all made sense.
Her original recipe makes 38 meatballs, I halved it here and it still made an abundant amount for one meal. Some things did not halve exactly, but meatballs are forgiving and reflected below.
