Watermelon Mojito

So pretty! Generally not a rum gal, but this feels so summery and light. Smashing up the juice from the watermelon gets you a light pink color and the lime and sugar helps brighten things up.

I know the mocktail business is thriving also and you could pivot with these by leaving out the rum and adding more watermelon, maybe a squeeze of agave and soda water.
