
Summer Slaw w/ Cashew Dressing

I love a slaw for summer! Many of the requests lately are sides to bring to a BBQ or block party and what not. Tender greens wilt quickly, but cabbage can hold its crunch for a bit. In this one, the classic mayo based dressing is replaced by a soaked cashew version. When you give the nuts at least an hour to soak, the dressing comes out thin and smooth enough to coat the slaw.
I would consider this a side, but add grilled protein to make a meal of things.
If you are a Trader Joe’s shopper, you could use two bags of the Cruciferous Crunch mix, and remove the chunky stems and roots in the mix.
