Strawberry Cornmeal Muffins

We enjoyed this combination at a farmstand near us so I did my best to recreate them at home. Fresh berries in a muffin can affect their delicate structure, so we'll use berry jam for that flavor, and sprinkle just a few fresh berries on top for looks. Cornmeal can bake up gritty, so don't skip that rest for it to hydrate a bit.
The below will give you 12 small muffins, or 10 larger ones if you want to fill them a little more.
