Pan Seared Cod w/ Grapefruit

We lost our dear friend Braden just before Christmas. His family are friends of ours from the kids’ school, and we’ve gotten to know all of them well over the past few years. He was an avid fisherman – fishing locally, in Alaska and Mexico, and was always the first to call friends over after he cut up his most recent catch. I don’t always have success with cod, but if you can find the good stuff (try to find a great online source or farmers market fishmonger), it’s silky smooth and light and goes with anything. This was the last piece in my freezer from Braden, so I wanted to dress it up well. Grapefruit, fennel and chimichurri are some of my favorites, and they don’t cover up the fish.
