
One Pot Harissa Lemon Chicken & Rice

I hope I am not finding you in a heat wave because this does require some oven time. If you truly can't do it, it will work stove top - just cover it and leave it on low heat. We start with the chicken, take it out, sauté some aromatics in with our rice and put everything back in. The veggies will come in at the end - some shaved cucumbers, tomatoes and pomegranates (out of season at time of publishing but I found them at Sprouts no problem).
We need lots of toppings, it adds all the freshness and texture at the end so go big!
