The star ingredient here is sumac, which brings a lemony- almost floral note to Mediterranean and middle eastern dishes. We use it in the sumac onions on the burgers, and it’s one of our favorite “spices” that can bring a stunning deep red note to roasting, grilling, and veggies. Sumac can be found at most supermarkets or on Amazon, or if you are having a tough time finding it, I’ve used a dry harissa seasoning for a similar flavor.

Instead of rolling and forming falafel, to save time we have taken the concept and turned them into crispy chickpeas that roast in the oven while you crisp your pitas. The dressing is made right in the bowl for easy cleanup, but feel free to make it ahead and double for a dressing to have through the week.

For protein, grilled chicken would be great here. Or, grilled steak, shrimp, even salmon might be nice. For vegetarians, the big hunks of salty feta work great, or some soft boiled eggs would be a great touch.
