Chicken & Polenta with Cherry-Fennel BBQ Sauce

Don’t worry about the fennel being overly strong. It’s just the seeds and they are unique and nuanced, without the strong licorice flavor some don’t like.

I did the chicken with bone in and skin on to get the proper BBQ feeling. You can do boneless, skinless, just be sure to watch the cooking time as they’ll cook much faster. Hammer down the chicken to even thickness before marinating. If it’s not quite grill time for you, try an indoor grill pan, or roast the chicken in the oven. Start at 375°F to prevent burning, and then up to 450°F near the end of cooking for outside browning.
