
Chicken & Cucumber Salad w/ Mango Dressing

It's mango season and the sweet and juicy atulfo variety are easy to find (the smaller, more oblong guys). We'll use them in the dressing here (use 1.5 if they're small!), but if your people like rice bowls more than salads, just drizzle this tasty dressing over the chicken, rice and veggies! You could even add some ripe mango chunks into the bowl.
All the veggies are cut in a larger format so it's more crunch than lettuce. This would be a gorgeous salad to make for a baby shower, Father's Day or any sort of celebration meal coming up.
I had yuzu koshu in my fridge from another recipe so I threw it in the marinade, but it's tough to find, so don't stress about it.
