Peachy Avocado Salad

This salad is delightful as a side or as a main – just pair it with your favorite protein or add some cooked quinoa and or lentil to fill it out further.
If you can’t easily pull apart your peaches after scoring around the center, it’s likely you’ve got yourself some clingstone peaches. The freestone - ones that release easily from the pit - are typically later in the season. Simply slice around the pit then dice those babies if needed.
There’s a non-dairy feta-like “cheese” by a company called Violife that tastes wildly similar to goat cheese. If you can’t do dairy, give that a try.
