Beets are so hearty and last in the fridge once dressed. They can vary in size, which doesn’t really matter, as long as the beets in the bunch are similar in size, so they have a similar roasting time.

Yellow or red, doesn’t matter a whole bunch, but I like that yellow don’t stain everything pink and find their taste milder. Same directions stand either way!

This is all pretty lightly dressed, as the cheese adds a lot of flavor. If you like balsamic vinegar or glaze, that could be nice over the top too.
