Mango, Black Bean & Avo Salad w/ Mexi Green Goddess

We all loved this dressing! Don’t skip that part. A key here is to pick a great mango that is ripe but not mushy, and I chilled it in the fridge so it was easier to work with. Also, is it time to sharpen your knives? That helps.

If you are not one to stock goat or sheep's yogurt (much easier to digest should you be interested in reading further), a cow or non-dairy yogurt is fine. Just be sure it’s not flavored.

I added a few things to make this a meal and it can take any grilled shrimp, steak, mushrooms of your choice to stretch it further.

Most markets have a bag of shredded cabbage (sometimes called cole slaw mix) if you don’t have cabbage to use and want to save time.
