It’s a side! Since we’re so deep into soup and stew season, I figured I would throw a salad in here for a side. We also have lots of gatherings coming up this season, and this salad can sit well at a potluck. Alternatively, add some shredded chicken and maybe a bit of cheese and I could see this being a great lunch option.

We call it spoon slaw because Hugh loves salads that he can eat with a spoon. Chop the greens in a food processor or with a knife or kitchen shears to get things into small pieces. If you are making a big batch (it does save well!) consider mixing two kinds of kale for more of a monochromatic color.

Should you be near a Trader Joe's, the chili onion crunch peanuts are great here! I’m also not above subbing a few bags of their cruciferous crunch (picked through to remove any big core pieces) for all of the greens.
