Halloumi Skewers w/ Chunky Chimichurri

Make your chimi in advance. If you want heat, I’m sure you’re not surprised that I like adding a small jalapeno. I’m calling it “chunky chimi” in case you are making this on site, and access to a food processor or blender is not an option. You can get a smoother sauce in those machines, but it is absolutely fine to do by hand too.

Halloumi can be pricey. Trader Joe's sells it during the summer for $6 a block which is the most affordable I’ve seen it. Some have reported their Costco has it if you’re really a fan because it’s probably a pack of 12 ;)

We also pack those pre-cooked rice packs and heat them in a Dutch oven with a splash of water and oil or butter. I didn’t add avocado to the ingredient list, but that’d be great here too!
