If I want a really toasty sear on the fish, I will sprinkle a little bit of flour on both sides before searing to make sure the meat is super dry. Not crucial, especially if you want it to be gluten free, but it does help you get a more golden outside.

On the side? Over a light pasta, some roasted fingerling potatoes, garlicky broccolini and garlic bread. Halibut is special, seasonal for another month or so, and expensive. If you want something more affordable, a cod or rockfish would be a great alternative. A light, white, flaky fish can swap in just fine here.
