This one is better plated or bowl-ed with the goodies on top. The peaches are heavy and can weigh down the greens, so I prefer to keep them on top and serve it that way. I call for parm here but feta or goat cheese work too.

Your protein here can go any way. Add some quinoa if you want to keep it a veg entrée - we usually always have grilled chicken because the kids like that, but shrimp and salmon work as well. Marinade? Coconut aminos, avocado oil, bbq blend seasoning, soy sauce, fresh garlic, squeeze of lemon or lime. It works on everything.
