You’ve asked for more sides for gatherings and dinner parties so we’re beefing up our collection here. This is a great dish to add to any summer barbecue and is very prep-ahead friendly. I suggest par-boiling your potatoes, cooling them, and then storing them in an airtight container. The next day you can grill them up and it should all come together quite quickly.

You can also make the entire thing a day in advance and serve it the next day. It may get a little dry. If you have extra dressing, save it and add the rest to rehydrate the potatoes the next day.

If you don’t like pepperoncinis, pickles and pickle juice would be a good substitute.
