Grilled Corn Salad

A block-party salad that goes with just about anything this summer.

The corn can be grilled in advance, but basil or mint will turn black, and cheese can get soggy so save those two components until just before serving.

A few dollops of mayo or sour cream are great here to thicken up the dressing and make the whole situation creamy. This is by no means necessary, but if you’d like it richer, add that to the dressing! I used cabbage so it all stayed crisp

You could serve this with some grilled flank steak or as a side for a taco party.
