Grilled Cajun Chicken w/ Cauliflower Rice

For the sake of time, we’re using pre-riced cauliflower rice but if you want to do it yourself, break down a head of cauliflower, remove as many of the stemmy bits as you can, then pulse the florets in your food processor for a minute or so. Voila! Cauliflower rice.
Little ones may appreciate regular rice as opposed to the imposter rice we’ve used here so feel free to sub whatever rice you have on hand. If using regular rice, you may want to increase the cilantro and lime additions.
If you’re worried about the heat for kids, you can halve (or omit) the amount of cayenne pepper. Cilantro haters! Some basil and parsley would be fine here for some herbs.
