Green Bean Salad w/ Walnuts & Dill
Serves 4
SKCC
We’ve been making a roasted broccoli salad this way lately, so I applied the same simple prep to skinny green beans. If you are part of a group where oven space is tough to get, this recipe keeps you out of the way. For travel – first blanch and dress your green beans at home. Add the dill and walnuts just before serving. I’ll add cheese or not depending on what else is on the menu. If the menu is heavier, I like to have at least one dairy-free side, but this can take feta, goat cheese or parm well.
I wrote in a one hour chill time after you dress the beans so when serving, they are just colder than room temperature. These are also good very cold or even warm if you prefer!
