Cucumber Crunch Salad

I’d consider this a side dish, not a meal, but we need a few more sides around here. You could bump it up for a vegetarian main with a bit more rice, and some marinated and seared tofu. It would go great with the Hoisin Pork dish, to make a fuller meal out of things, and have kid and adult friendly dishes.
The black rice is for looks, some short grain brown rice or quinoa would be great here as well, just to add some heft.
