Crunchy Sesame Slaw

This recipe is written as a side - light, crunchy, goes with all sorts of summer mains. If you want to turn this into a quick meal, it takes well to avocado, any grilled protein (we did some quick marinated and grilled chicken in soy sauce, coconut aminos and sesame oil) and even some cooked soba noodles or rice if you want to make it more hearty. Consider this a base, and add to it to make a meal of things.
It is a good one for a potluck or BBQ, because cabbage can sit out, in the dressing, and not get soggy for awhile.
We liked the peanuts in here for extra crunch, but skip them should you have an allergy.
