Crispy Salmon w/ Green Olive Salsa Verde

Serve alongside some roasted potatoes or a simple rice pilaf to go along. I always recommend trying to find a belly piece of salmon, often from a butcher, so it is an even thickness instead of a skinny tail piece. King salmon is unique to this summer season, and is incredibly tender if you can find it!

Not into salmon? This topping would be good over chicken too. You could even add a drained can of white beans to bulk it up further.
