Creamy Chicken & Sun Dried Tomato Pasta

We generally love having leftovers and nothing was left behind from this dish! We are to the point where I really need to use closer to 1 1/2 lbs. of ground meat to feed all four of us, and this recipe is so forgiving, you could use a range here and add a bit more of both liquids. If you also like leftovers, are feeding a larger family, or have big eaters, consider doubling the recipe. The noodles do drink up the sauce, so pasta water or broth can be added to keep things saucy.

Could you use dry packed sun dried tomatoes instead of those in oil? Yes, I just find that they don’t melt into a sauce quite as well, but they definitely work! Would any other green work? Totally. Cubed chicken instead of ground chicken? Just give it a bit more cooking time.
