Collard Wraps w/ Miso Carrot Spread

So, I was on a bender of buying these rainbow collard wrap things from Trader Joe's and cut myself off because I knew I could make them myself, and all the packaging felt wasteful. That said, these are a little bit of prep work up front, but they can easily be packed for lunch the next day. These are wraps raw, but if you have the patience to steam the collards for even just 15 seconds, they become a little easier to eat.
In my first cookbook, we made these with a carrot ginger sauce for these, but the Bitchin' Sauce would be great here as well.
