This recipe makes about 20 cookies. I smushed down half of them with plans to make mini ice cream sandwiches but the cookie was far too hard to be enjoyed with the texture of the ice cream. Did we eat them? Of course, but I wouldn't recommend it. The room temp cookies were far better.
You will ask if you can use unsweetened coconut, and while I am sure it’s possible, the sweetened stuff is much softer and I prefer it here for texture. If you insist with the former, I’d consider adding a tablespoon or two of butter, or an egg yolk, to help keep them tender.
What will we do with these extra egg yolks?! Adding an extra one to your favorite chocolate chip cookie recipe really is a game changer! Maybe a batch of lemon curd or a carbonara pasta with the others! Don’t toss them!
