I know this may sound a little strange, but if you want to make this a little more filling, toss in some leftover rice. When we do that, it makes this salad so filling.

Every grocer has a different type of cruciferous mix, but we’re basically looking for some sort of cabbage (green and purple), carrot, kale or the like mix. If you are starting from scratch, I would say half a head of both green and purple cabbage, and 2 julienned carrots makes up a generous sized bag.

Coconut aminos are naturally sweeter than soy sauce or tamari, so if you use that, you likely won’t need the maple. Your call. If you are a tahini person, a few tablespoons of that into the dressing gives it some body as well.
