Cabbage Crunch Salad w/ Ginger Miso Dressing

This salad is light and satisfying, but if you want to make a proper meal of it, pair it with some tofu (or chicken or steak) and rice noodles to bulk it up. The dressing will thicken in the refrigerator. If it’s too thick for your liking, simply thin it out with a little water or lime juice before using. I used store-bought zucchini noodles because I wanted noodles thicker than what my julienne peeler could give me. Do not use frozen ones!
