Add this to your lunch repertoire! You guys love a make ahead, packable lunch option and this is the one.
I take day-old bread and pulse it up, then fry it in the leftover shallot oil. This gives us a crunchy, crouton-esque add on. Making this ahead? Reserve the crispy crumbs for serving so they remain crisp. You could add some parmesan or feta here to add more richness, but I didn’t find it was crucial. You make that call!
