This is the time of year when it may be easier to find thicker pieces of salmon that would fit on a skewer. If I’m buying from a meat counter, I ask for the thicker, belly pieces, as the tail ends are tricky to get on a skewer. A simple rub, a whizzed up sauce, and you have a very easy meal with rice or potatoes or alongside the grilled vegetable platter from this week’s menu!
