BBQ Tofu Bowls w/ Rainbow Slaw

This is vibrant, crunchy, chewy, sweet and a little tangy. It hits all of my requirements for a satisfying meal! If you’re allergic to soy, the same marinade would be fab on chicken or salmon. I’d suggest pan sear grilling the chicken, instead of the roasting method we have below.
The slaw is super riffable! Use what you have. You’ll need about 8 cups of veg, preferably something cruciferous that can stand up to the fridge.
I drizzled the Harissa Ranch over this to complete the dish. If you aren’t making that, head to the sauce archives and pick out another dressing that would complement the dish.
