Barbacoa Tacos

We’re upping our slow cooker, feed-a-group sorts of recipes and this is a winner! We slow cook a bunch of beef with broth and spices and onion, then shred it up and serve it with all the tacos fixings. We used chuck meat here, but short ribs or flank steak work as well.
If you are a nachos sort of household, or like stuffing baked potatoes with things, this would be great!
This fed all four of us, plus some leftovers to have on hand for a second meal later in the week.
